Vegan Cookie Dough

YES, you can eat it raw. #Vegan

No chicken ovulation, no fat, low sodium, easy peasy and delicious. 

I have not tried to bake these, however you can roll them into balls, freeze them and then dip them in melted dark chocolate if you want to create cookie dough truffles.. which I can assure you, are phenomenal as well. Or you can, like me, take a spoon and eat it as a little treat after dinner. 

You only need a few things that you can find at most grocery stores or health food stores! 
Ingredients:
- 1 cup Gluten free Oats
- 1/4 cup coconut flour 
- 2 tsp pure stevia 
- 3/4 cup almond milk (or coconut, hemp, flax milk) 
- 2 tsp pure Canadian ;) maple syrup 
- 1 tsp pure vanilla extract
- pinch of pink sea salt
- 1/2 cup vegan chocolate chips/ cocao nibs

Step 1:
Blend the oats and coconut flour until it turns into a powder (I used a small magic bullet blender.. food processor, small blender, coffee grinder should work.) Place in a small-medium bowl.

Step 2: 
Stir in the stevia and mix all together. Add the remainder of ingredients (except chocolate chips) and mix until smooth.  Once you have a dough forming, add the chocolate chips and mix all together. Because you used oats, they will soak up extra liquid so if it is a bit more liquid than you are used to, that's ok! It should taste sweet enough to your liking! 

Step 3: 
Cover tightly with wax paper and place in the fridge for 1-2 hours to absorb and thicken. 

Step 4: ENJOY however you like! :D
