Honestly, how good do those look? Chocolate cupcakes with melty marshmallow surprise inside, marshmallow icing and graham cracker crumble on top. Yes, I created these magical muffin miracles. I love s'mores, and marshmallows (dandies), and graham crackers. It was my birthday so I had to create something AMAZING. I went to my local health food store to get my staple ingredients and headed to the counter. I place down a package of Bob's Red Mill Chocolate Cake mix, a bag of mini Dandies and a box of GF graham cracker crumble. The cashier says, "I don't know what on earth you are making but it looks like it is going to be PHENOMENAL".  He.hehe...She was right.

What you need:

Cupcakes:
-GF Chocolate cake mix (of you choice)
-replace eggs with boiled flax eggs 
(1 egg = 1 Tbsp flax + 2 Tbsp water, boil for 1 minute and cool)
-replace milk with almond milk (Or coconut, rice, flax, oat, quinoa, soy)
-replace butter with Earth Balance or Coconut oil
-1  tsp pure vanilla extract
- Coconut palm sugar (if needed)
- Mini Dandies to put in the cupcake middle
Icing:
- 1 stick of Earth Balance Buttery sticks
- 1 tsp vanilla extract
- 3 tbsp coconut palm sugar
-1/2 bag of dandies 
-2 tbsp almond milk
- Graham cracker crumble to sprinkle

Follow the directions of your cake mix and place a few dandies in your batter once poured into the cupcake cups. [make sure your push them right in the middle to be almost covered!] The Bob's Red Mill cake mix rose so well, without eggs! It was fluffy and moist and amazing. Your dandies will brown as they finish baking.

Let them cool on a cooling sheet for a while while you perfect your icing. In a bowl with an electric mixer, beat butter with vanilla and coconut sugar. Put a small slice of the butter in a little pot to melt your dandies with.

Once that is done (sorry, no picture, but it will be like a buttercream icing almost!). Melt the rest of the dandies (about half the bag) in the pot with a bit of butter so it doesn't stick to much. Once they are melted and smooth, quickly add them to the icing bowl and mix with the beaters. This should create a fluffy, delicious icing.

Taste it and add what you'd like to taste. Ice them right away. You can use a ziplock bag to spread by cutting a hole in one corner if you don't have a proper icing bag.

Ice your cupcakes and sprinkle your graham cracker crumble all over the top! ENJOY!
