This was an on the fly recipe, basically putting together whatever I had left and wound up an amazing, gourmet dinner! I will remember it as much as I can... So I hope that you can replicate the results and enjoy it the way I did! The gnocchi is homemade, so if you prefer to have a remade you will be able to skip through to the sauce! I hope you like it! |
Gnocchi-
1 sweet potato, chopped
2 small potatoes, chopped
1 garlic clove
1 tsp pink sea salt
1 cup of oat flour
1 cup of gluten free flour
Boil the potatoes and sweet potatoes for about 20-30 minutes until soft. Mash them and add the garlic (pressed) and the sea salt, mix until smooth! Add the mix to a large bowl
Add the flours into a bowl and whisk together until blended. Slowly add the flour mix into the potatoes mix until it is all blended together. When it is cool enough to touch, sprinkle some GF flour onto a table surface and fold unto a dough. It should look like a bread dough almost and keep folding and moulding it for about 5-10 minutes. Boil a pot of water while making the gnocchi.
Take a small handful and roll into a 1/2 inch worm shape. Cut the roll into small pieces along the "worm" (about a centimetre each). Add about 10-20 pieces into the boiling water at a time until they rise to the top and float. Spoon out the floating ones and replace with uncooked pieces.
Sauce-
1 1/2 cups of tomato sauce (your favourite)
1 cup pumpkin purée
1 small can of coconut milk
3 tsp curry powder
2 tsp masala spices
1 tsp coriander
1 tsp paprika
1/2 tsp cumin
1/2 sea salt
Mix all together in a sauce pan over medium heat. Once heated, lower heat and as the gnocchi finish, place them in the sauce and mix around each time you add more!
