Protein spice loaf

Think you'll never eat bread, baking, cookies, muffins and cupcakes again??? Don't worry, there is always a way!! Gluten free options are growing everywhere and so are vegan alternatives. 

This bread is delicious, moist and packed with protein! A slice of this bread is a great option for a snack if you really need, or with lunch or dinner. Also a great option for dessert after a healthy, veggie dinner! Here we go with the recipe!
What you need:

- 2 tbsp Chia Seeds
- 2 tbsp Flax meal
- 6 tbsp water
- 1 cup oat flour
- 1 cup almond flour
- 3 scoops of Arbonne Vanilla Protein Powder
- 1 scoop of Arbonne Fiber Booster
- 1/2 cup of shredded coconut
- 1 tsp cinnamon
- 1/2 tsp of all spice
- 1 tsp stevia
- 1 tsp xylitol (Or another of stevia)
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 15 Dates (Natural, pit them yourself)
- 1 cup almond milk
- 2 tbsp nut butter
- 2 tbsp coconut oil
- 1/2 cup chocolate chips (Dark chocolate, vegan)

Step one is to make your chia/flax eggs. Add them to water and stir every few minutes until it is mixed [it will expand and thicken as you go]. Leave it in the fridge for 20 minutes. This is why you do this at the beginning! Once you are done you can preheat the oven to 350 and mix your dry ingredients in a large bowl.

Oat flour, almond flour, protein powder, cinnamon, all spice, stevia, xylitol, baking powder, baking soda- mix together!

You can set that aside when you are done. Healthy, vegan protein in the oat flour, almond flour and protein powder which are the base of your bread! The chia and flax adds great nutrients and vitamins.

I love adding cinnamon, nutmeg etc. to everything! It adds some bite. and it is delicious in the recipe! YUM! 
Buy natural dates and pit them yourself, that way you know they aren't going through loads of processing! Its easy peasy to do so, just cut lengthwise and pull out the seed and you are set!

Add the Dates, Almond milk, Coconut oil and Nut butter [I used peanut butter but I would probably recommend almond butter] of your choice in the blender and blend until smooth!

Once this is blended, you can add your chia/flax mixture and your blender mix all to the dry ingredients! Mix until smooth. Add chocolate chips and spread the mixture in a greased (with coconut oil) loaf pan! You can sprinkle some extra cinnamon, coconut and stevia on the top if you want! Bake for 30 minutes or until knife comes out mostly clean. Enjoy!!
