Honestly, how good do those look? Chocolate cupcakes with melty marshmallow surprise inside, marshmallow icing and graham cracker crumble on top. Yes, I created these magical muffin miracles. I love s'mores, and marshmallows (dandies), and graham crackers. It was my birthday so I had to create something AMAZING. I went to my local health food store to get my staple ingredients and headed to the counter. I place down a package of Bob's Red Mill Chocolate Cake mix, a bag of mini Dandies and a box of GF graham cracker crumble. The cashier says, "I don't know what on earth you are making but it looks like it is going to be PHENOMENAL".  He.hehe...She was right.

Banana Nicecream

I've been wanting to make pure banana ice cream for a while.. but I never had a food processor. I borrowed my mom's and found about 12 organic bananas for 50% that were perfectly ripe. [ripe is when they are speckled! cost me $2]. Now, lots of people think "OMG Bananas have so many calories!". I don't count calories, and I eat as much fruit and veg as I want. They are the purest, healthiest things you could ever eat, right from mother nature. Eating raw fruit and veg is how she intended "food" to be. Other people think if you eat too many bananas, you will get potassium poisoning. Before you freak out, please do proper research. Here is some good info on that topic from the banana pro. 300+ bananas in 30 seconds is impossible... plus I used about 4 in this AMAZING breakfast. I made it on my birthday, BEST birthday breakfast.

Thai bites

Kinda sweet, kinda spicy, kinda super totally delicious!!! I used to love Chicken Thai bites back in the day... and I have made an alternative! They are SO yum!! You can serve them whatever way you like and you can also use whatever flavours or sauces you'd like! We ended up eating them with lettuce and cucumber slices rolled up in rice wraps and it was an amazing combo!! To use rice wraps, just boil some water and place in a pie dish and sit the wrap in the water for about 10 seconds, until it is soft, then place on your place and add your fillings. The thai flavour really makes the whole thing taste amazing!

This recipe is CLEAN,  VEGAN, RAW, GLUTEN FREE, HEALTHY! 
It is SOO easy and quick, literally a 2 minute job. I had no idea how it would taste but I have to say, I was pleasantly surprised. This is my new FAVORITE dessert! It is sooooooo good I can't even explain!! You just have to make it and see for yourself!! I think this is how I will eat pretty much all of my avocados from now on. Strawberry banana ice cream/ smoothie with dark chocolate shreds? Looks like dessert, but I had it for breakfast :D

In a blender, mix 1 Banana, 1 cup frozen strawberries, 3/4 cup almond milk and 1 tbs chia seeds. You can pour the almond milk slowly as you blend to keep it thick. Pour in a bowl and let it sit for 15 minutes in the fridge or freezer [depending how you want the consistency to be]. I shredded some pure dark chocolate on top. You could also sprinkle shredded coconut! YUM! Eat with a spoon and be FILLED WITH ENERGY!

Vegan Rice Crispy Squares

Ok seriously. Rice Crispy Squares are one of my favourite treats out there. I think it's because I LOVE marshmallows. S'mores..... everything Marshmallow. UNFORTUNATELY, marshmallows have ground up animal bones and other products (Like pig skin **sad face**) to create a main ingredient "gelatin". NASTY. 
I got inspired at the heath food store yesterday when I saw "Dandies" on the shelf. They are VEGAN MARSHMALLOWS made by Chicago Vegan Foods. I tried one and I am SOLD! They taste WAY better than regular marshmallows and they are healthier! No GMO, no Corn Syrup, No fat. Basic ingredients... love it! I also bought Earth Balance Buttery Spread Sticks (used 1 for this batch.. including to grease the pan a bit). And Nature's Path Crispy Rice.

Seriously one of the BEST Juices I have ever had! It was so flavourful and refreshing!! Everything in it is organic! I can't wait to be in California so I can buy LOCAL again!!! Nothing grows in the snow :P 

JUICE THIS: 
- 3 kale leaves
- 1/4 of a Cucumber
- 1 Gala Apple
- 2 carrots     - 1 lemon (ends cut but not peeled)    - inch of ginger root

Looks nasty right? I know. It tastes like a regular smoothie though! 

What gives it the dark colour? A mix of spirulina and berries. (blueberries & blackberries). All healthy good stuff!! Don't judge a drink by its colour.

These little exotic fruits are quite delicious!! Very sweet and tropical tasting. The fruit is found mostly in asian countries but is spreading around more as the years go on. I recommend eating as much local produce as possible but once in a while its fun to try things! (this is another reason I must move to California!! Canadian winters have NO local fresh produce!!). Persimmons are rich in dietary fiber, vitamin c, potassium and beta-carotene. Here is how to eat it! You can eat the skin, just wash it well!

Trying to stay healthy this winter? Me too. That is why I've been loading up with juices, smoothies, Arbonne shakes and raw salads! Getting all the nutrients possible from organic fruits and veggies! 

Today I decided to do a simple juice [maybe because I have to make a grocery trip and I had no other option :P]. Using all very healthy, beneficial ingredients, I juiced 3 carrots, 3 full celery sticks, 1/2 a lemon (cut off the peel) and a 1/2 inch chunk of ginger root. It tastes amazing and gives you an immunity boost right away!! Fill your body with health!! <3

Pizza is something you think you'll never eat again when changing to a vegan and gluten free lifestyle. Luckily, many pizzerias are starting to offer gluten free options but the no cheese thing is what makes it difficult for most people. I was craving pizza and I had a mix from The Mix Company called "Pizza Crust or Flat Bread". I also had their "Cream Sauce Mix". I LOVE chocolate mint. If you don't, you can replace the mint with something else. Strawberries or other fruit/jam, or Vanilla, or Chocolate! I had a big event with a bunch of my business partners in Arbonne so I wanted to make an Arbonne Cake! I had no Idea how to even start.. but it turned out both beautiful and DELICIOUS!

MY NEW FAVOURITE MEAL!!! These are amazing, easy and cheap!!! You can buy rice wraps in the asian section of your local grocery store. I just keep using whatever veggies I have left before another grocery trip. I start by frying up some onion, then add whatever veggies you want!! I shred the carrot with a peeler until its gone so its thin and softens easily. Broccoli in little pieces, pepper, tomato, celery, kale, spinach, whatever!! Use a tbsp of olive or coconut oil to cook all the veggies. Add some pink himalayan sea salt, pepper, paprika, basil and then pour in some Tamari sauce. I also cut up fresh cucumber and left it raw. You can do it all raw if you like as well!

Chocolate muffins

I turned them into cup cakes for a friend's birthday and they were a hit!! I also made mini ones! it ended up making 24 minis and 9 large!! What a deal! Check out The Mix Company for all of their products!

I used boiled flax egg and chia with water to replace the eggs. I used a banana and apple sauce for a sweetener with a bit of stevia! SOOO moist and delicious!! Quite rich too!! The recipe for the "bettercream" icing is here! 

My mouth is watering reliving these babies!

"Bettercream" Icing

Ok so I need to work on the "delivery".. but you just wait! I will perfect the look! This was the first attempt at vegan butter cream icing, but it turned out amazing!!! 

I used Earth Balance buttery spread, coconut oil, coconut milk yogurt, cocoa and stevia! All things you can get at your local grocery store or health food store! Start with half a cup of buttery spread and 3 tbsp of coconut oil and blend them with an electric mixer. Add 3 tbsp of Plain (or vanilla) Coconut milk yogurt. I used So Delicious Dairy Free cultured coconut milk, plain.  Keep blending! The mixture will start to get nice and fluffy! Add in 1/4 cup stevia or xylitol. You could also use a banana whipped into that if you want that flavour! Add 3 tbsp of pure cocoa powder and blend that in. Taste and see if you have a desirable flavour. I found the coconut milk yogurt really gave it a cream cheese icing taste.. it was so DELICIOUS! ;) 

When that you have achieved the flavour and fluffy consistency, put the mixture into a ziplock bag (then cut a small hole in the corner) or an icing bag and make it look prettier than I did! :D

Veggie Medley

Quick, easy and healthy dinner right here!! Use all of your favourite veggies or whatever is left in your fridge! 

Start with 1 tsp olive oil in a pan on medium-high heat. Add chopped onion and cook until browning. Add 2 cloves of garlic, pressed. Add chopped pepper, celery, kale, spinach etc. peel carrots into long, thin shaved strips (the whole carrot!) and toss them in. Consistantly string. Add a splash of water if the pan is getting dry. Lower heat and add a drizzle of Tamari sauce (gluten free). Add some pink sea salt, pepper and voila!

I'm totally in love with The Mix Company's "Cream Sauce" mix. As always, it is gluten free and vegan and incredibly delicious! 

I decided to do a sort of scalloped potato dish for dinner with this sauce but I added zucchini and sweet potato! You can add whatever veggies you want. This turned out amazing!!!

OH. MY. HEAVEN. These really are DREAM cookies. They were puffy and moist and chocolatey and delicious!! 
I will be featuring many mixes from The Mix Company on here. Its a company based out of Eganville, ON that sells fresh, healthy, gluten free mixes for all sorts of things!

This pecan, pumpkin pie went over well at my family dinner of 30! 

If you are looking for a healthier alternative to pumpkin pie, this is it! We cut out the flour, eggs, milk, butter and sugar! Using the natural sweetness of dates and maple syrup, it will still satisfy your sweet tooth. 

My aunt, who is always making dinner for the family, is celiac. She never even makes something she can eat! but she got to eat this one!

Chocolate Mint Cookies

Ok. so I LOOOOVEEE Mint Chocolate. Like.. LOVE. I was craving a chocolate, chocolate mint cookie but didn't have many options. I asked my sister [Andrea] if she wanted me to make some with the rest of our chocolate chips. She said, "Sam.. you need to have a recipe so they for sure turn out good." Therefore.. since she didn't trust my random experimental skills, I decided to use SOME and make myself a personal cookie.. 
Well, let me tell you! I brought that thing out when it was ready.. and it smelled SOOOOOO good. I sat it right beside her on the table. She kept glancing over and said it smelled and looked good. I gave her a piece and we both agreed it was amazing. So she said "Ok, should have trusted you! these are really good!!" She later suggested I open a vegan, gluten free bakery..... THAT got my business wheels turning. Maybe one day ;)

WOW. I'm so impressed.. this has become a favourite of mine! I've made it 3 times, each differently so I could post the best recipe but they all turned out AMAZING! I will give you all of my ideas and you can play around too! 

Basically when you are going Vegan AND Gluten-Free, you would expect to be giving up anything close to Mac and cheese. Most people have a hard time thinking about giving up cheese. I thought I would but honestly.. you get over it. This dish will fulfil any cheese craving and it's actually healthy.. and VEGAN!

It's getting colder!! The leaves are changing colours.. and falling to the ground! Sometimes you just crave a nice warm soup to warm you up! That is how I felt ... so I made this! Its delicious, flavourful and warmmmmmm. 
You can put whatever veggies you like but I used:

Pumpkin Pie Protein Shake

I LOOOVEEE Pumpkin Pie. LOVE. In fact I have a minor addiction to pumpkin spice soy frappuccino at Starbucks... but I am trying to find ways around that. Working and a perfect recipe, but this one is DELICIOUS! And instead of syrups and sugar, its pure, vegan protein! 

Easy peasy and SOOO filling! Just put everything in a blender until smooth and then enjoy!! You can add more stevia or sweetener if you want, or more almond milk if you find it too think! 
- 4 ice cubes
- 1 cup almond milk
- 3 tbsp pumpkin puree
- 1 tsp cinnamon 
- 1 tsp all spice
- 1 tsp flax meal
- 2 Scoops of Arbonne Protein Powder
