
Pizza is something you think you'll never eat again when changing to a vegan and gluten free lifestyle. Luckily, many pizzerias are starting to offer gluten free options but the no cheese thing is what makes it difficult for most people. I was craving pizza and I had a mix from The Mix Company called "Pizza Crust or Flat Bread". I also had their "Cream Sauce Mix". I decided to play around and create and amazing pizza... and it worked!
First thing you need to do is make the crusts. All of the mixes have the instructions, alternatives, nutritional info and ingredients on the back. Preheat oven to 400 F.
For eggs, I always use the "Boiled Flax e.g.g". Basically you take 1-2 tbsp of flax meal and boil it with about 1/4 cup- 1/3 cup of water (depending on how many eggs you are replacing. This recipe only requires 2 so I did 2 tbsp of flax with 1/4 cup of water. Let it boil for 1 minute and let it cool (stir in between). It literally turns into the consistency of an egg! | Next you mix 1/3 cup of olive oil, 1 tsp of apple cider vinegar and 1/4 cup almond milk. You will then add the pizza crust mix and stir that together. Spread the mix on a greased pan with a wet spatula. They should look somewhat like this. |
(you can change the shape of you want. You could also make more mini pizzas or one huge one.)
Bake these for 10 minutes on the bottom of the oven. Take them out and brush with a bit of olive oil and then add your toppings. I used a regular tomato sauce, spinach and the cheese sauce [which I am about to explain]. Add as much veggies as possible!
FOR THE CHEESE:I heated 2 tsp of the cream sauce mix with about 1/2 cup of almond milk and 1/4 cup of nutritional yeast. Let it heat up and thicken and then top it on your pizza. It will look like a margherita pizza! When you put it back in the oven, the cheese with crust a little on the top so it works perfectly!
Pop them in the oven for another 10-15 minutes! ENJOY!
