One of the brands at the event was NONA. They were serving samples of their rich and creamy vegan sauces. We tried their selection of flavours including Cheesy, Alfredo and speciality Carbonara (a perfect collaboration with MAGIC VEGAN BACON GREASE). The flavours were a spectacle for the tastebuds! So rich and satisfying. So here is what we made with with Carbonara sauce!
- 1 bag (300-350 g) of Gluten Free pasta of your choice
- 1 head of broccoli
- 1 large tomato
- 1/2 head of purple cabbage
- 1 onion
- fresh basil
- Coconut bacon (video tutorial here- make ahead of time)
- NONA Sauce of your choice (all will be delicious in this meal!)
In a frying pan, sautée the chopped onion on medium heat- while adding a tsp of water when they start to stick. Cook those until they turn translucent
Boil a pot of water (amount as directed on the pasta package). Once boiled, add the pasta and cook as long as directed on the package.
As the pasta cooks, add the cabbage, tomato and broccoli, all chopped into small pieces. Cook for 5 minutes. (add water as needed so they don't stick) Once soft, lower heat a bit and add the NONA sauce for the last 3-4 minutes and heat until warm. Mix all together. If it starts getting too thick, add a small amount of plant milk like almond or rice milk just to keep it moving (make sure the heat is low!
Serve pasta on plates and top with sauce, fresh basil and coconut bacon!
