Mac 'N Cheez

WOW. I'm so impressed.. this has become a favourite of mine! I've made it 3 times, each differently so I could post the best recipe but they all turned out AMAZING! I will give you all of my ideas and you can play around too! 

Basically when you are going Vegan AND Gluten-Free, you would expect to be giving up anything close to Mac and cheese. Most people have a hard time thinking about giving up cheese. I thought I would but honestly.. you get over it. This dish will fulfil any cheese craving and it's actually healthy.. and VEGAN!  

Okay so first thing is first, choose your noodles and start boiling them! I used brown rice noodles (1 Bag for a casserole dish which serves 3-5) You can use that or quinoa noodles.... something gluten-free with some nutrients ;). When the noodles are going, you can start mixing your "cheese" sauce. 
Here are some ingredients I used!
- 1/4 cup almond milk
- 3 to 5 slices of Daiya cheese
- 1/3 cup of Nutritional yeast
- 1 tbsp Earth Balance Buttery Spread
- Gluten free Croutons or bread crumbs
- optional* Daiya Cream Cheese (I used a bit of the herb and garlic one)

You can either just mix in the noodles when they are done to the sauce OR if you want a casserole like dish with crispy bread crumbs, then you can place the noodles in a dish and mix the sauce in there!

If you choose to do a casserole dish, you can turn your oven on broil and add the bread crumbs to the top of the dish.

You only need to let this broil for a few minutes to brown the tops since the rest is already cooked! YUMMM. 
I've served this now to several non-vegans and they all LOVED IT! Kids will too! WAY healthier than a box of KD. It's still super quick too!!

Choose your spices.. I used:- Pinch of Pink Himalayan Sea Salt 
- sprinkle of ground pepper
- 1 tsp paprika
- sprinkle of Garlic 
- sprinkle of Basil

 Also, if you want to add veggies, steam them while you are making the rest and stir them in before adding the bread crumbs! I used broccoli and it was delicious!
