
Ohhhh lordylord. These are delicious AND Healthy! Gooey and crisp, chocolaty and sweet and oh so good.
I was attending the annual BBQ my leader in business holds at her house every year. I was driving 5 hours to attend and this was my 4th time doing so. Every year the event is amazing, inspiring and motivating... and also has loads of healthy food everyone brings from the potluck!
I wanted to bring something for dessert, but healthy and that everyone could eat. So I whipped up these babies in my grandmas kitchen! They are Gluten free, vegan, nut free (Other than almond milk) and refined sugar free! They have protein and oat fiber! I had no recipe, I just hoped for the best.. they turned out great so I will share with you guys!!

Crust:
In a bowl mix together
- 1 cup of oats (Blend in a blender or food processor)
- 1/3 cup of unsweetened coconut
- 1 scoop of Arbonne Chocolate Protein Powder
- 2 tsp Chia seeds
- 2 tsp flax meal
- 1 tsp stevia
- 1 tsp cinnamon
- 1/4 cup of melted coconut oil
It will look something like this when your are done!!
In a bowl mix together
- 1 cup of oats (Blend in a blender or food processor)
- 1/3 cup of unsweetened coconut

Press that into a greased [with coconut oil] 8x8 pan until the whole thing is covered.
Now for your filling! I used to think dates were gross..but now I LOVE them! If you aren't sure about dates, try this recipe, they honestly taste SO good!!
blend in a blender:
- 2 cups of pitted dates
- 1 cup of almond milk
- 1/4 cup of dried cherries
- 1 tsp cinnamon
Make sure the consistence is thick and jelly like from the dates. If it's too liquid, keep blending and add more dates or some almond flour. Layer that on top and bake for 20 minutes at 350 degrees.

NEXT STEP... CHOCOLATE!!
I used half a large dark chocolate bar. But you can use dark chocolate chips or wafers or whatever you choose! Make sure they are vegan!
- 1 cup of chocolate chips (Or equivalent)
- 1 tsp of stevia
- 3 tsp of almond milk
- sprinkle of cinnamon
Melt it all in the microwave in 30 sec intervals or melt in glass bowl over bowling water in a pot. Stirring consistently. pour the chocolate mixture over top and evenly distribute with a spatula. LET THEM COOL!! Seriously until they are cool. Otherwise you will make a mess!
NEXT STEP... CHOCOLATE!!

Once I put them on a serving plate, I sprinkled the left over crumble from the pan on top. Nom Nom Nom!
