Usually fries are deep fried in oil that cooks all sorts of meats and goes all day. So fatty and gross! These fries are actually clean. They are baked in just a tsp of coconut oil and some flavorful spices!
Well do the fries first as they take longer and then the recipe for the veggies! This is a super easy dinner. You could also just do a salad if you want to be even healthier!
While that's baking, chop the other veggies you want! I did yellow and green zucchini, red pepper and mushrooms. When the fries are done, take out the tray and flip the fries around. You can just scrape them off with a spatula and move them around. Place the other veggies on the tray with the fries and add the same spices [or just sea salt and pepper]. Put that back in the oven for about another 20 mins.
Everything should be pretty cooked but to brown them a little more (If needed) flip the oven to broil and place the tray on the top rack. This should only take a few minutes so keep an eye on them!!
