
My favorite rice! I think im obsessed with everything coconut. Oil, Ice cream, yogurt, milk, shredded in everything AND rice! You can make it as a side to whatever veggie dish of your choice. Its amazing with Bok Choy, Coconut Curry, Stir fry, Steamed Broccoli...Whatever! This recipe has lots of flavor and a bit of bite! Enjoy!
1 cup basmati rice 2 1/2 cups of water 1/2 cup of coconut milk 1/2 cup of shredded, unsweetened coconut 1 small onion, chopped small Sprinkle of Cayenne 1/4 tsp of Masala mixed spices Sprinkle of basil Sprinkle of garlic powder Touch of Ground pepper Pinch of Sea salt | Put the rice in a medium pot and add water and coconut milk and onion. Put it on the stove on high until it boils. Put the heat to low, and add the rest of the ingredients. Stir and then cover with lid to let steam for 30 minutes. You can check it after 20 and stir it so it doesn't stick to the bottom of the pot! If you want more flavor, add different spices! Remember you'll probably have a sauce from whatever dish you make it with! |
