
Sometimes you just need a little treat. How exciting is it that you can make those treats clean and healthy!? Only 5 simple ingredients here!
I LOVE chocolate mint. Like.. LOVEEEEE it. This recipe I made on a whim because I wanted to try and make chocolate mint something! I will soon perfect doing the same idea for clean peanut butter cups so stay tuned!! This recipe made 3 small cups and I used a muffin tray but small sizes!
What you need:
-DARK vegan chocolate, melted
- 1 tsp of coconut oil
- 5 tsp of shredded coconut (unsweetened)
- 1 tsp of stevia
- 4 drops of peppermint oil

What you need:
-DARK vegan chocolate, melted
- 1 tsp of coconut oil
- 5 tsp of shredded coconut (unsweetened)
- 1 tsp of stevia
- 4 drops of peppermint oil
First you want to spoon the melted chocolate into the trays. I cut small pieces of wax paper first and pushed and folded them into the trays like muffin cups. Poor the chocolate in those and spread them thin along the bottom and up the side. Put them in the freezer! Next mix the rest of the ingredients in a bowl until smooth.
Spoon a bit of this mixture into the frozen chocolate cups and pat down with a spoon until flat. Place them in the freezer for about 10 minutes. You can melt more chocolate while doing this. I like to melt in by boiling a small pot of water and putting a glass bowl on the pot, this way the chocolate won't burn and you aren't using radiation from the microwave.
Once they are frozen, poor a spoonful of melted chocolate over top to connect with the cup sides. You can smooth out the tops with your spoon!
Put them in the freezer for about 15 minutes! Peel them from the wax paper (Should be easy) once you are ready to enjoy! If you don't eat them all or you make more, you can keep them in the fridge after they are frozen, or the freezer, your choice!!
