I used boiled flax egg and chia with water to replace the eggs. I used a banana and apple sauce for a sweetener with a bit of stevia! SOOO moist and delicious!! Quite rich too!! The recipe for the "bettercream" icing is here!

Start by pre-heating the oven to 375 F You can use cupcake cups.. try to have the right size...[unlike moi]. What you need: - Chocolate Muffins Mix - 2 tbs flax meal - 1 tbs chia seeds - 4 tsp apple cider vinegar - 1/4 cup stevia or xylitol - 1 mashed banana - 2 cups applesauce |
First you want to make your chia and flax eggs!! Take your chia seeds and mix them into a small cup with 3 tbs water. Let it sit for 10 minutes, stirring every few! Take 2/3 cup of water and but it in a small pot on high with your flax meal. Let this mixture boil for 1 minute and then remove from heat. Once it cools, put it in the bowl with the chia mitre and the apple cider vinegar. Mix in the apple sauce, banana and stevia until the mixture is smooth. Blend in your dry mix of chocolate muffins until everything in smooth!
Next, spoon your mixture into each cup! I had to do 3 batches because it made so much! (Who is complaining.) Bake each for 15-18 minutes. Let them cool for 2 minutes in the pan and then do your next batch!! If you are doing large muffins, it will make about 18!
You could also add chocolate chips (vegan/gluten free. Enjoy life is a good brand) before baking if you want to! For a good icing, check out this recipe! ENJOY!
