I'm so in love with these delicious and nutritious, on the go snacks or lunches! They are packed with healthy, plant based proteins, omega 3, fuelled with energy and  fruit. As you may know, I usually don't mix fruit with anything else but I have noticed that my body can easily digest these babies! So I'm happy to have them, I feel fuelled, full and ready to go. We've been so busy in the new year with business meetings, getting healthier and reaching new goals. These have been great to bring along to eat in between meetings in an action packed day!

YES, you can eat it raw. #Vegan

No chicken ovulation, no fat, low sodium, easy peasy and delicious.

I have not tried to bake these, however you can roll them into balls, freeze them and then dip them in melted dark chocolate if you want to create cookie dough truffles.. which I can assure you, are phenomenal as well. Or you can, like me, take a spoon and eat it as a little treat after dinner.

You only need a few things that you can find at most grocery stores or health food stores!

My sister and I made up this creamy soup recipe last night and it turned out so amazing! It is so easy and a must try. Vegan of course, it is just vegetables and herbs so its super healthy (what else would it be on Sammi's Secrets!). You have the option to mix in some Daiya if you want a bit more "cheez". The texture is creamy and smooth and its loaded with nutrients from root vegetables and cauliflower. Nutritional yeast will add extra vitamins and give it a "cheese" like taste, without the dairy and fat! Here is what you'll need:

Theses are like, apple pie bites/ jelly donuts with an apple crunch.
Just slice a section off the top and bottom of 2 apples (like in the photo) and set aside. Chop up the rest of the apples into chunks and blend them in a food processor with 8- 10 dates and a tsp of cinnamon. Blend until soft and mixed!

You can eat them like sandwiches this way or like crackers loaded with the apple pie filling! It is probably easier to eat that way! AMAZING!

Frisky Fries

No Salt, No Oil, Delicious, healthy FRIES!
Preheat oven to 375 F and put your pan or cookie sheet in there to heat.
Cut up your potatoes into french fry shapes, cover them in herbs and spices (like Paprika!).
Cut a piece of parchment paper to cover the pans and once oven is heated, place the paper on the pans! (Remember they are HOT! this will help the fries get crispy without oil!)
Bake for 35 mins and then broil for 2 minutes to brown the top! ENJOY!

I will post a ketchup recipe once I have perfected my healthy ketchup <3

Oh my gosh.. the options!! First I will talk about RAW rice rolls. These are so yummy and so filling and you can use ANY veggies and even some fruits in theses to mix it up each time! I used my food processor grater to do the carrots, sliced the cucumber, cut up romaine or use baby leaf lettuces. You can use pepper, mango, pickled veggies, cabbage, cilantro, parsley, tomato, broccoli, beets, avocado, spinach, snow peas, green/yellow beans... Whatever your beautiful heart desires.

The Sauce I made though... Amazing. You can switch up the ingredients to your liking to keep it raw or not fully raw. I used the mini magic bullet for this sauce.

Vegan Rice Crispy Squares

1/22/2014

Ok seriously. Rice Crispy Squares are one of my favourite treats out there. I think it's because I LOVE marshmallows. S'mores..... everything Marshmallow. UNFORTUNATELY, marshmallows have ground up animal bones and other products (Like pig skin **sad face**) to create a main ingredient "gelatin". NASTY.
I got inspired at the heath food store yesterday when I saw "Dandies" on the shelf. They are VEGAN MARSHMALLOWS made by Chicago Vegan Foods. I tried one and I am SOLD! They taste WAY better than regular marshmallows and they are healthier! No GMO, no Corn Syrup, No fat. Basic ingredients... love it! I also bought Earth Balance Buttery Spread Sticks (used 1 for this batch.. including to grease the pan a bit). And Nature's Path Crispy Rice.

Persimmons

These little exotic fruits are quite delicious!! Very sweet and tropical tasting. The fruit is found mostly in asian countries but is spreading around more as the years go on. I recommend eating as much local produce as possible but once in a while its fun to try things! (this is another reason I must move to California!! Canadian winters have NO local fresh produce!!). Persimmons are rich in dietary fiber, vitamin c, potassium and beta-carotene. Here is how to eat it! You can eat the skin, just wash it well!

Rice Wraps

MY NEW FAVOURITE MEAL!!! These are amazing, easy and cheap!!! You can buy rice wraps in the asian section of your local grocery store. I just keep using whatever veggies I have left before another grocery trip. I start by frying up some onion, then add whatever veggies you want!! I shred the carrot with a peeler until its gone so its thin and softens easily. Broccoli in little pieces, pepper, tomato, celery, kale, spinach, whatever!! Use a tbsp of olive or coconut oil to cook all the veggies. Add some pink himalayan sea salt, pepper, paprika, basil and then pour in some Tamari sauce. I also cut up fresh cucumber and left it raw. You can do it all raw if you like as well!

Chocolate Mint Cookies

Ok. so I LOOOOVEEE Mint Chocolate. Like.. LOVE. I was craving a chocolate, chocolate mint cookie but didn't have many options. I asked my sister [Andrea] if she wanted me to make some with the rest of our chocolate chips. She said, "Sam.. you need to have a recipe so they for sure turn out good." Therefore.. since she didn't trust my random experimental skills, I decided to use SOME and make myself a personal cookie..
Well, let me tell you! I brought that thing out when it was ready.. and it smelled SOOOOOO good. I sat it right beside her on the table. She kept glancing over and said it smelled and looked good. I gave her a piece and we both agreed it was amazing. So she said "Ok, should have trusted you! these are really good!!" She later suggested I open a vegan, gluten free bakery..... THAT got my business wheels turning. Maybe one day ;)

- 1 tsp all spice
- 1 tsp flax meal

Spice muffins are the perfect flavour for fall! I met a very sweet woman named Cate who owns and runs "The Mix Company" yesterday at the local health food store. She had loads of samples of her gluten free food mixes and every single one was DELICIOUS.  I decided to buy her Spice Lovers Muffin mix. My dear mama has beautiful cherry tree in the back yard and this year is blossomed like crazy!
She has BAGS full in the freezer so I decided to use some for these amazing spice muffins. You can use whatever you like! Carrots, zucchini, pumpkin, sweet potato, apple sauce etc!

Craving chocolate cake? Here is a great gluten free, vegan, refined sugar free recipe for you! I am trying to perfect a frosting so I will post a separate recipe once I have! For this one I just blended some stevia, coconut milk (fullfat, thick part only) and coconut and popped it on top.

I wanted a yummy filling so I added a local blackberry jam half way through. I want to perfect that too so stay tuned!!

Here it is, enjoy!

Peach Spice Muffins

OH. MY. GOODNESS. I wish I could send smell and taste over the internet. Thats how amazing these are!! Perfect transition from summer to fall! A little peachy sweet with some soothing, warm spice! You could really replace the peaches with anything, but because they are in season, this is what I used!! All of the ingredients are healthy, its basically like having a bowl of oatmeal with some fresh peaches.

Now, as you know, I usually don't eat fruit throughout the day or mixed with anything. So these are literally a treat. If you are into a super cleanse, might be best to mix in something else. You could use some pumpkin or raisins or chocolate chips (vegan).
Whatever floats your boat but just a little warning!

Fruity Frenzy

Organic, fresh fruit has so many benefits to your health. So many people are worried about calories so they cut out fruit and go with some processed cereal or protein bar instead. BAD! When you follow Sammi's Secrets, you only eat fruit in the morning, on an empty stomach. Also, you should be somewhat active, so burning some fruit calories should be nothing at all to worry about. When you eat a plant-based diet, you loading your body with natural vitamins, minerals, antioxidants, enzymes and nutrients!!
Focus on THAT. This is a delicious breakfast smoothie I like to enjoy to start off my day!

5 minute hummus

I did hair and makeup for a wedding this weekend and was there from 11:30-3.. meaning no lunch. I got home and was about to rampage the kitchen. Luckily I had barely anything left and was in need of a grocery run. I had a cucumber and a yellow pepper sitting there. I wanted to dip it in something!! All I could see was ketchup and mayonnaise and bottled sauces.
I opened the pantry cupboard and saw a can of chick peas. LIGHTBULB! Hummus!! I had a jar of tahini, 1 lemon, garlic and all sorts of spices!! I had a meeting in 10 minutes so was hurrying as much as possible.
1 can of organic chick peas, 1 tsp tahini, juice of 1/2 a lemon, 2 cloves of garlic (pressed), some spices, popped in a blender for about 10 seconds (until smooth). VOILA! So simple and boy, was it ever satisfying!! I'm so glad I had a healthy snack!

They are pretty quick and easy to make and they are delicious! I kept them in the fridge and the next day they were even better!! The cold kept them moist and refreshing in a way! Definitely making these babies again!!

As always, they are
Gluten free, vegan and refined sugar free. I use stevia as a sweetener mostly but there is also xylitol and dates!
