I was craving a veggie soup to help knock this cold out of my body so I used whatever I had in the fridge and cupboards and it turned out amazing! Can't wait to have it again for dinner tonight!
Here is what you will need: Soup pot blender ladle knife cutting board stirring spoon Ingredients: 1 onion 1 garlic clove minced 4 beets 3 potatoes chopped 3 carrots 3 celery sticks 1 red pepper 1 can of organic, diced tomatoes 1 litre water/organic vegetable stock handful of fresh parsley basil thyme Himalayan pink sea salt black pepper | Step 1: Chop onions and garlic and add to soup pot with enough water to just cover the bottom of the pot. Sauté the onions until clear. Step 2: Chop beets and potatoes into small chunks and add to pot with enough water (or veg stock) to cover the contents in the pot. Step 3: Add in Chopped carrots, red pepper and celery and the rest of the water/ stock. Put a lid on and let it simmer for 10 minutes. Step 4: Add in the entire can of organic tomatoes with the juice inside. Also add the parley and herbs (chopped if they are fresh) if they are dried, about a tsp each. stir and let simmer for 20 minutes Step 5: Add in salt and pepper to taste and anything else you think might taste good! I added a sprinkle of cayenne pepper to give it a kick :) Step 6: Once all veggies are soft, take about 6 scoops with a ladle of the veggies and liquid and put into a blender. (be careful because some blenders don't do well with hot contents!) Pulse the soup until smooth and add back in and stir! This will just make it a little bit thicker but still give you the liquid and veggies ! ENJOY! |
